Healthy Gooey Ooey Blondies.
So I can’t actually decide if I love brownies or these blondies more… who am I kidding, it is definitely these as I love peanut butter as you all know.
These blondies have this niche little crisp on the outside but are perfectly soft and gooey ooey in the middle.
They are nice and sweet with a touch of the peanut butter and choc chips just top it off.
Honestly who would have thought that peanut butter and chickpeas work? But this recipe shows they absolutely do.
You can’t really taste them but they give the blondies a great texture and added vitamins and minerals, right?
So don’t sit there and wait – go bake! They are super easy, go try these delicious gooey ooey blondies.
And yes I have used cups – I generally do this when experimenting with new recipes – so just use the same cup – okay..
Ingredients
1 can chickpeas
1/3 cup peanut butter - I use pip & nut
¾ cup coconut sugar
¼ cup chickpea or spelt flour
1 tsp baking powder
A big pinch of salt
1 tsp vanilla extract
Small bag normally 100g of cooking chocolate chips (or Reeses do a peanut butter chop chip)
Method
Place chickpeas and all of the other ingredients apart from the choc chips in a blender and blend until a soft mixture.
Then add in the choc chips and stir well.
Place in a baking tray lined or buttered and bake for 35 minutes at 175/180
