Spicy Sweet Potato Soup and the Start of ‘Shrink Your Waste’
On average we create 400kg of waste individually, that’s roughly 26 million tonnes produced in the UK. But only 12 million tonnes are recycled meaning the rest ends up in landfill.
So, we could be doing more. This month we are going to look at how we can do that across lots of items that we throw away. Let’s start with food waste.
That equates to £7.5 billion pounds worth of food waste! Shocked – we were. So for this month November let’s look at how we can save money, eat healthier and do some good for our communities and planet.

To give you an idea on what these might be – your first one is COOK A RECIPE USING SOMETHING THAT HAS BEEN IN YOUR CUPBOARD FOR AGES!
We started with this, we had a tin of lentils that (yes it had gone out of date) had been there for ages, so we decided to use it up – we also had some sweet potatoes that were pushing their luck too! But if you follow me Ellie (or know me )you will know I love a curry! So we cooked up a spicy storm with these ingredients and some curry paste we had in the fridge too – which in all fairness probably needs using too! Lol….
Ingredients
2 x Sweet potatoes
2 x potatoes
1 tin of lentils
1 x onion
1 tin of coconut milk
1 tablespoon of curry paste
Hot water and stock.
To do…
Chop the onion and fry in saucepan with oil and the curry paste, add the lentils and a small amount of water. Simmer for 5 minutes. Add the potatoes and rest of ingredients and boil until the potatoes are falling apart! Add the coconut milk and use a hand blender to turn creamy smooth!
